Day 5 – Olive Tapenade

It’s a Greek thing and soooo delicious. There are hundreds of variations, so if you don’t have all the below ingredients, improvise and use something you do have.

Day 5 – Olive Tapenade

1 c. black olives (can also use Kalamata olives)
3 artichoke hearts
2 Tbsp olive oil
2 Tbsp capers
1 Tbsp lemon juice
1 Tbsp chopped parsley
1 tsp fresh thyme
1 garlic clove

Pulse all ingredients in a food processor. DONE!! Taste before adding salt and pepper.

Serve with crostinis, crackers, pita chips, etc.
